Colorado ranks 5th in the United State for potato production and potatoes are Colorado’s leading specialty crop. In this issue, students will explore the spud-tacular potato learning about the history and geography of potato production, how farmers grow more with less, the different types of potatoes and cooking styles, and the nutrition value.
